Linzer Cookies with White Truffle Fig Jam

Afternoon tea anyone? Serve these easy to make and very delicious buttery- white truffle fig jam linzer cookies. An impressive looking cookie to set out for a sweet truffle treat. White Truffle and fig jam uses a perfect blend of the finest wild white truffles and juicy sun kissed Mediterranean figs. 

Root44 Truffle Fig Jam Linzer Cookies

 Makes approx. 12 cookies

Ingredients:

  • 150g cold butter

Directions:

  1. Preheat your oven to 350 F (180)
  2. Cut the butter into small pieces and place into a medium bowl with the powdered sugar and flour.
  3. Mix your mixture by hand until it forms a crumbly texture.
  4. Add vanilla, eggs and continue to mix by hand until the dough becomes smooth (approx. 2-3 mins).
  5. Form your dough in nice ball shape and place into a bowl.
  6. Cover your dough and set in refrigerator until chilled (approx 30mins).
  7.  Remove the dough and set on a floured board.
  8. Collect your rolling pin and cover it with some flour to prevent the dough from sticking to it,
  9. With the floured rolling pin roll out the ball shaped dough flat until about 2 cm in thickness.
  10.  Press your round (scallop) shaped linzer cookie disc (5cm) into the cookie dough. With remaining dough remnants, reroll again to 2cm and  press the cookie disc to make more cookie shapes.  Repeat this process until all or most of the dough as been used.   
  11.  Place half of the cut shaped cookies on a baking sheet lined with baking paper. These are your based cookies.
  12.  With the remaining cookies, press the centre with a cookie disc (shape of your choice - any size between 1.5-2cm). These are your top cookies.
  13. Spread your white truffle fig jam over the base cookies - use approx. 1 tsp/cookie base.
  14. Gently press the top cookies over the base cookies.  Be sure to line up your cookie shapes.
  15. Place the cookie in center of the oven and bake for 10-12 mins or to light brown colour. Be sure to remove them if the cookies begin to brown.
  16. Cool to room then add a nice sprinkle of powdered over the cookies before serving.
