Spring Culinary Delights in the Green Heart of Istria


Spring is here… sort of. It’s that time when your winter coat still lives beside your sunglasses and shorts. But longer days and warmer sun remind us that summer is just around the corner.

In Green Istria, Croatia—perched along the 44th parallel—spring arrives early and in full bloom. The warmer air breathes life into the forests and fields, awakening wild ingredients that define the season. Local markets overflow with colour, and small village kitchens get to work turning these treasures into unforgettable meals.

One of my favourite seasonal delights? Wild asparagus—earthy, slender, and hand-picked from forest edges. You’ll find it folded into omelets or tossed with handmade fuži pasta. For the adventurous: it’s snail season, and many konobas (local taverns) serve them with polenta or pasta—a beloved tradition in Istria’s green interior.

As nature wakes, so do other wild delicacies: dandelion greens, nettles, wild fennel, ramsons (wild garlic), and early spring mushrooms like morels and St. George’s mushrooms. And as we edge closer to summer, the black summer truffle emerges—mild, aromatic, and heavenly shaved over eggs, pasta, or cheese.

Right now, I’m getting ready to welcome another amazing women’s group to Istria for a culinary adventure full of great food, incredible wine, and stunning landscapes. From truffle hunts to vineyard tastings, this region never fails to spoil.
